Flexible, high-performance cuts
The Quick Service Restaurant (QSR) sector shows an ever-increasing demand for chicken products cut accurately into bone-in pieces to compose multi-piece chicken buckets. In every part of the world, a bucket may contain different quantities of chicken pieces, varying from 8 to 11 pieces. Besides that, their weight specifications and quality requirements are very tight. Marel has the perfect matching solution to perform such high-performance cuts in a very flexible way: the ACM convenience food cut-up system.
Stand-alone or in-line
The ACM convenience food cut-up system can function as a stand-alone system with manual shackling, or it can be connected to an in-line process through an automatic transfer unit. Since the number of cuts is limited, the system can be mounted in a compact setup.
Bypass or add
The ACM convenience food cut-up modules are installed in a floor-mounted frame and cut product into wing, breast, thigh and drumstick portions. A keelbone cutter, which can be bypassed, provides an additional portion. All modules are individually adjustable, such as the drumstick cutting module, which is adjustable for knee joint cutting including the H-cut to “KFC” specification. By bypassing or adding modules, any QSR partition of the chicken in multiple pieces is possible.
Tight weight range
Each module is set up in a way to produce consistent and homogeneous portions which all respond to a tight weight range. This is because all pieces together should be prepared in the same amount of time. If desired, all parts from an individual product can be collected on a synchronized conveyor belt.
