An Equalization Chill tunnel both chills and tenderizes. For optimum tenderness, an Equalization Chill tunnel should follow a shock chilling system.
Equalization Chill is the second phase of a two-stage chilling system. In the first stage birds are chilled rapidly to inhibit the growth of bacteria.
Slowly chilled to the core
In the secondary, penetration chilling stage, which lasts much longer, turkeys are chilled slowly to the core, using less cold air at lower velocities.
Before entering the Equalization Chill tunnel, turkeys are manually rehung to the KD-12T rotating multishackle, which can hold 12 turkeys per shackle. This leads to an efficient use of available space and the most effective chilling.
The method of hanging products by two legs prevents deformation of the carcass in the chilling stage. Thus it ensures highest yields in the downstream cut up processes.
